Isomaltulose (6-O- <alpha-D-glucopyranosyl-D-fructofuranose), also known as palatinose, is a natural component of honey and is also commercially produced from sugar cane. Isomaltulose consists of glucose and fructose, in comparison with sucrose has a high stability, favorable for the teeth, slow absorption and 40-50% sweetness. Isomaltulose has a low glycemic index, is a long-lasting energy source and has no harmful effects on human health.
